Steak
Marinate 1 tbsp. For 2lbs of diced steak. Allow steak to marinate for at least 30mins. (Recommend to leave over night) as you’re cooking make sure to properly baste meat with the oil the meat releases. As it’s close to cooked, taste a few pieces to see if more marinade is needed. (We use 12lbs of sirloin flap meat and two 1/4 cup scoops of marinade)
(This is what we recommend, but marinate to taste)

Chicken
Marinate 1 tbsp. For 3lbs of boneless skinless chicken leg or chicken thigh (whole pieces). Allow chicken to marinate overnight. Turn on grill or pan place chicken pieces skin side down get a nice color on both sides before dicing chicken for your tacos. (Flip chicken once and get a nice brown color on both sides) As you’re cooking make sure not to baste protein, allow oil/marinate to drain. We use 10lbs of boneless skinless chicken leg and 1/4 cup of
Marinade.
(This is what we recommend, but marinate to taste)

Marinate 1/4 cup for 3lbs of diced boneless pork shoulder butt with chopped onion. Allow pork to marinate over night. as you’re cooking make sure not to baste protein with the oil the meat releases. As it’s close to cooked, look at the color the meat has should be orangish red. taste a few pieces to see if more marinade is needed. (We use 12lbs of boneless pork shoulder butt and 1 cup of marinade)
(This is what we recommend, but marinate to desired color, avoid bloodshot red and a pale red, may add more marinate as it’s already cooked to get desired color)
